"Remember to Remember"

It was during the midst of CNY when we hang out together again for dinner after work. The CNY holiday made me a slacker which literally equated me to a bigger eater. Nothing beats a good meal together after pouring ourselves with frets from work, and we chose over Kuchai Lama, another food hub we have yet to spend time on though its nearer for us & we always ended up in PJ.
Now's the time to look for the traditional Bamboo Noodles! Since reading Joe's post on Nippy, both its name and noodles were fastened in my memory.

I shall quote their culinary approach:
1. Bamboo pole is used to bounce in order to distribute equal pressure on the dough to develop the right structure, texture & pliability for a tooth-y springy bite of egg noodles.

2. Noodles will then be cooked in hot boiling water.

3. Then rinsed & immersed quickly in cold water, then blanched again in hot water to provide the gentlest bite.

4. Finally tossed in premium soy sauce & served with various toppings. Yummy!

The Golden 5 minutes: Enjoy the noodles within 5 minutes for the springiest texture! Obviously I couldn't finish it within 5 minutes... Fret not. It'll still be as good; with only slight changes in texture.

Pan Fried Dumpling - a fair serving. Nothing to shout about and we've decided to stick to the noodles instead if we're revisiting.

I love the name - Nippy Noodle Restaurant - so cute! The noodles look delicious - so flavoursome, and those dumplings - YUM. I am so addicted to dumplings - every time I see them on a menu, I order them, heeh. :)

we find the pan fried dumplings so-so. But their wanton was great :) dumpling soup was better. ^^

I love dumplings too. But this pan fried version was only mediocre. Soup version better :)
